No-bake desserts: 8 recipes that work first time

Cups, chocolate, fruit and a fridge. For August, oven-less flats and 20-minute cravings.

Not everyone has an oven. And those who do will not turn it on at 35 °C. No-bake desserts are a stable food search: cups, biscuit tarts, mousse and fruit that looks like a restaurant.

Chocolate and the fridge

Two-ingredient mousse (chocolate + cream or aquafaba), ganache on a biscuit, banana, cocoa and salt. 70% dark chocolate needs less sugar and feels more adult. Do not boil cream as if it were pasta.

Cups that look intentional

Greek yoghurt, honey, biscuit crumble and fruit. A poor tiramisu (biscuit, coffee, mascarpone or whipped cheese). A layer of mango or strawberry stops being “a yoghurt” and becomes dessert. Use a water glass so you see the layers.

Fruit that is not penance

Strawberries with pepper and balsamic, citrus with oil and salt, watermelon and feta if you have it, pear and blue cheese. Acid and salt make fruit a plate.

Mistakes

Jelly that never sets because raw pineapple kills it. Cream that will not whip because it is warm. Biscuits that turn to soup because you soaked them for a minute. Work cold and use a timer.

Frequently asked questions

Can I make cheesecake without an oven?

Yes: biscuit-and-butter base, whipped cheese filling, four hours in the fridge. It is not Basque cheesecake. It is another tart, and that is fine.

Condensed milk or cream?

Condensed milk for sweetness and body without whipping. Cream for air. Do not mix both blindly or it will be too sweet.
